Green Cardamon
Cardamon is one of the world's most expensive spices. Each pod has around 20 aromatic seeds. The aroma of cardamon is strong but mellow, fruity and penetrating. The taste is lemony and flowery. In India cardamon is one of the most essential ingredients in many spice mixes.
It is also used to flavour tea and coffee in middle eastern countries.
Whole pods, slightly crushed can be used to flavour rice, casseroles and braised dishes.
Cardamon is good in Indian pilafs, roast duck and chicken, and in marinades or spiced wine.
It is also used in baked apples, fruit salads and poached pears. Remove pods once dish is cooked.
